Gas and Electric Combis with V-Air® System

The EZ series of Combi Ovens offers the capability to steam, dry bake, bake with steam, retherm, reconstitute, poach, roast, slo-cook, proof, hold and warm. Either a heat thermostat or a probe can be used for controlling the temperature in the oven. Minimum footprint is required because of the top mounted motor. No boiler or reservoir. The use of a dry steam system minimizes the amount of water consumed (2.43 gals. per hour per oven at continuous operation). Maintenance is at a minimum since there is no need to delime or clean a boiler.
